Sunshine Salad

 

Ingredients:

  • 1 (3 - ounce) package lemon Jello
  • 1 cup hot water
  • 1 cup cold water
  • 1 tablespoon vinegar
  • 1 cup grated carrots
  • 1 cup crushed pineapple, drained
  • 1/2 cup chopped nuts (if desired)
     Dissolve Jello in bowl with hot water.  Add cold water and vinegar.  Then add the carrots, pineapple and nuts.  Refrigerate until set.  Serves 8.
