Layered Spinach Salad

 

Ingredients:

  • 1 pound fresh spinach, torn into bite-size pieces

  • 2 hard cooked eggs, chopped

  • 5 green onions, sliced

  • 10 slices bacon, cooked and crumbled

  • 1 10-ounce package frozen green peas, thawed

 

  • 1 8-ounce carton sour cream

  • 1 cup mayonnaise or salad dressing

  • ¼ teaspoon lemon-pepper seasoning

  • 1/8 teaspoon garlic powder

  • ½ cup freshly grated Romano cheese

 

Layer spinach, eggs, green onions, bacon and peas in large deep bowl.  Combine sour cream and next 3 ingredients, stirring well; spoon evenly over peas, sealing to edge of bowl.  Sprinkle with Romano cheese.  Cover tightly and chill 8 hours.  Toss gently before serving.  Yield:  8 servings.
